YELLOW GNOCCHI WITH CLAMS

Ingredients

  • 900 gr. Gnocchi fresh
  • 800 gr. clams
  • 1 sachet of saffron
  • 3 tomatoes
  • 6 tablespoons extra virgin olive oil
  • salt q.s.

Preparation

Wash the clams under running water, place them in a shallow saucepan without the
addition of water and cook until they open with the pot covered. Drain them and remove the shells.

Peel the tomatoes, cut them in half, remove the seeds and cut into cubes. In a saucepan heat the oil, fry the tomatoes, add the clams and saffron dissolved in a little cooking water and stir.

Meanwhile cook the gnocchi in salted water, drain them with a slotted spoon and pour into the clam sauce; heat up, sprinkle with parsley and serve.
