Spring Roll Beef and mozzarella

For the marinade :

Preparation
Wash, dry and finely chop the fresh herbs. Add them to the olive oil.
Mix with lemon juice, salt and pepper.
Slice the mozzarella into sticks.
Cover with half the marinade. Keep in the fridge.
Arrange the carpaccio slices on a large serving dish and cover with remaining marinade. Put in fridge.
Put rice crackers into cold water for about 1 minute to soften them. Place them two by two on a tea cloth and put two carpaccio slices and several mozzarella sticks on the centre.
Fold over the ends of the rice crackers and roll them up tightly.
Serve with a salad and spring roll sauce.
