Small shellfish salad with basil
Ingredients
For 4 persons
- 8 Shrimps
- 8 Prawns
- 10 oz Tomatoes
- 2 White Onions
- 8 oz de Mozzarella
- Salt
- Pepper
- Olive oil
- Basil – the best “Pesto di Prà”

Preparation
- Prepare the vegetables: cut the tomatoes in two and mince the onions in julienne (long thin strips).
- Season with salt, pepper and basil.
- Peel the shrimps and prawns, then cook them in hot boiling salted water for about 1 minute.
- Arrange at the bottom of a flat dish the tomatoes, the julienne of onions, the 2 Mozzarellas cut in dices, then lay shrimps and prawns on top, seasoned to your taste.
