Salt cold fritters
Ingredients
- 1 kg of salt cod ,
- 300 gr. of flour ,
- 10 gr . yeast ,
- carbonated water , salt,
- 1 bunch of chopped basil .
Preparation
Leave the cod to soak for 24 hours to remove the salt, change the water two or three times.
Dissolve the yeast in a little warm water, add the flour, a punch of salt, the chopped basil; whisk and gradually add the water until the batter is smooth but not too runny.
Leave the batter for half an hour. Cut the well-dried cod into pieces and dip them in the batter.
Fry in the oil until golden brown. Leave on absorbant paper to take off excess oil.
The fritters should be crispy outside and soft inside.
Excellent as an aperitif .
