Pestou soup
Ingredients
For 4 people
- 300 gms. Fresh haricot beans,
- 200 gms new potatoes
- 150 “ tomatoes,
- 150 “ green beans
- 150 “ white onions,
- 100 “ carrots
- 100 “ leeks,
- 200 “ courgettes
- 1 branch of celery,
- 50 “ small pasta, such as “ditalini”
- 4 spoons of olive oil,
Preparation
Fresh PESTO Sauce: Pesto di Prà
Shell the haricot beans. Finely chop the leeks, celery, onion and slice the green beans. Finely cube the carrots, potatoes, courgettes and tomatoes.
Gently fry the vegetables in the oil until soft.
Add boiling water to cover and simmer for 45 minutes or until tender.
Add the small pasta 10 minutes before the end.
Just before serving stir in a few spoonfuls of fresh Prà Pesto.
