ARTICHOKES “Jewish” style

Ingredients

(for 4 people)
  • 6 cooked artichoke hearts
  • 3 sprigs of mint
  • 3 oranges
  • 7 onions
  • 1 lemon - 1 bunch of coriander
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons black olives
  • I teaspoon of cumin powder
  • Salt - Pepper

Preparation

Peel and chop the onion and garlic cloves. Squeeze an orange and lemon, then pour the juices in a bowl. Season with salt and pepper to taste, add cumin powder, chopped garlic and onion, then finish with olive oil. Mix all these ingredients.
 
Cut all the artichoke hearts in four, then pour them into a large hollow dish.
 
Peel the other two oranges and cut into thin slices before cutting each slice into four. Put them in the hollow dish containing the artichoke bottoms, then add the olives and season with sauce.
 
Mix.
 
Chop the coriander and the mint, then sprinkle the salad just before serving.
